Our latest vintage of Garnacha produced under the Idilico label comes partly from our own new plantings at Konnowac Vineyard (50%) and from Conley Vineyard (50%) a unique high altitude vineyard North-West of Yakima, WA in the Columbia Valley AVA. Both vineyards are certified Organic and the fruit is picked early in the seasons guaranteeing proper phenolic evolution without excessive alcohol content.
The wine was fermented in small one-ton lots and barrel aged in neutral French oak Puncheons for 8 months.
Pairing Suggestions - Grilled Salmon, Spanish Paella, and Pasta dishes
Drinking Window - Great now, but will continue to age well for 5-7 years.
